Today I am sharing my new favorite brownie recipe with you and because it is easter in a few days I had to decorate it with tons of stuff.

Of course the recipe is from my new cook book from Rosanna Pansino: Nerdynummies.

Lemonade cupcakes 

Hello everybody 🙂
This post contains a lot of pictures but I just couldn’t decide between them.

Today I wanted to share one of my favorite cupcake recipe with you.

Short story: 

These are the first cupcakes my friend and I made 4 years ago. Since that day I became more than obsessed with cupcakes and baking. Sadly after the first time, they always turned out so bad, but I wanted to try them again because I love them so much and they turned out so good.

 

For 12 cupcakes you will need:

  • 2 eggs
  • 100 grams sugar
  • 8 grams vanilla sugar or one tsp of vanilla extract
  • 50 ml vegetable oil
  • 125 grams flour
  • 1 tsp baking powder
  • 50 ml orange lemonade  (fanta, orangina, mirinda, something like this)

For the topping you will need:

  • 200 ml of cream
  • 8 grams of vanilla sugar / 1 tsp vanilla extract
  • 150 grams sour cream
  • 1 package vanilla pudding powder

Start with mixing the sugar, vanilla sugar and the two eggs until well combined.

 

 

Add the vegetable oil and mix for 1 minute.

In a separate bowl mix your flour and baking powder. Add the mixture by turns with the orange lemonade.

 

Now put the mixture into your muffin cases.

 

Bake the muffins at 150 degrees Celsius for 20 minutes.

 

Now let them cool down completely before starting with the topping.

Start by mixing your cream until it is completely stiff.

 

Then add your sour cream and pudding powder and mix carefully until everything is well combined.

 

This is totally optional but I added some yellow food colour for a more “lemonady” look.

Now it’s time to pipe!

A cupcake without sprinkles? Never heard of that! So of course I had to add some.

I am so so happy with these! I am also so proud that I finally was able to make them again and they taste so so delicious! You have to try them!

Easter nest cupcakes 

Finally I found the perfect chocolate cupcake recipe! To celebrate it I baked some easter nest cupcakes and they are so so delicious you have to try them out!

If you’re wondering this recipe is really similar to the recipe Zoe used for her easter cupcakes for red nose day.

This recipe is for 14 cupcakes 

For the cupcakes you will need:

  • 5 tbsp of boiling water 
  • 40 g of cocoa powder 
  • 3 eggs
  • 175 g of soft butter
  • 165 g of sugar 
  • 115 g of flour 
  • 8 g of baking powder 

For the topping you will need: 

  • 60 g of butter 
  • 30 g of cocoa powder 
  • 3 tbsp of milk 
  • 250 g of icing sugar 

Start with lining your muffin tin with paper cases.

I went for these cute paper cases which literally scream spring!

Now let’s start with our cupcakes.

Take your cocoa powder and mix it with your boiling water.

Until it looks like this.

Then add one egg at the time and mix until well combined.

Add your butter and mix until well combined. Then add your sugar and mix.

Now add your baking powder and flour and mix for a last time until it looks like this:

Fill each paper chase and bake the muffins for 15-20 minutes at 200 degrees Celsius.

Let them cool completely before starting with the topping.

When your muffins are completely cool start with the topping.

Melt your butter (I used the microwave for this).

Then add the cocoa powder and mix.

Don’t be scared when the mixture looks white when you add the icing sugar. When you add the milk it’s going back into a dark brown colour. 
Add the milk and mix.

Now fill your topping into a piping bag and pipe the topping over your muffins.

Now take your little chocolate eggs and put them on top of your cupcakes.

And finished are your little easter nest cupcakes! These taste so delicious, my family absolutely love them.
